Avoid using commercial non-stick sprays, as they are loaded with fat and calories, and the aerosol spray cans are dangerous to the environment (although they all say CFC-free, they still contain some smog inducing VOCs). Consider making your own non-stick spray using the recipe below.
Combine half-cup of vegetable oil (alternatively, you can use canola, soy, corn, peanut or olive oil) with 2 tablespoons liquid lecithin (lecithin is a soy product, and is used in commercial non-stick sprays). Pour the mixture in a bottle with a spout or a spray bottle. Use during any food preparation that will cause stuck-on food, including fresh vegetable sauté, cookie baking, or cake making.
